breakfast stack

After being ‘on the road’ for weeks at a time, venturing from hotel room to hotel room, there is one breakfast that my oh so lovely husband and I longingly crave. One bite is like a party in the mouth. Super easy to make, and so delicious that you’ll be wondering how you got by so long without it. AND it packs a serious punch with it’s health promoting properties!


per serve
1 piece of toast (I personally prefer biodynamic Pure Life Sprouted Spelt Loaf)
1/2 tablespoon unhulled tahini
1/2 avocado, sliced
1 tomato, sliced
1 thumb sized piece of fresh turmeric, finely grated
2 slices of tempeh, sautéed in a pan for 5 minutes with coconut oil and tamari (I personally prefer soy-free tempeh, made from chickpea or fava bean)
1 small handful of sunflower sprouts (but any other fresh sprouts would be great)
1 heaped tablespoon of sauerkraut (I personally prefer Peace, Love & Vegetables Dill Superkraut, but any other reputable organic brand would be great)
cold-pressed, organic, virgin olive oil
pinch of sea salt and freshly ground black pepper

** use organic and biodynamic ingredients where possible **

Lightly toast the bread. Spread tahini on the toast. Place the avocado slices on top of the tahini. Place the tomato slices on top of the avocado. Add the turmeric, salt and pepper. Place the cooked tempeh slices on top of the tomato. Place the sunflower sprouts on top of the tempeh. Place the sauerkraut on top of the sprouts. Drizzle olive oil over the top. Voila! You now have yourself an incredibly nutritious and delicious breakfast that will knock your socks off with it’s yummy-factor.

It is packed full of probiotics, vitamins (A, B’s, C and K), minerals (calcium, magnesium, iron) and helps to strengthen your immune system. Sauerkraut also helps to promote beautiful clear skin as well as helping to rid your body from candida and fungal conditions. It is a remedy for a number of illnesses from the flu to cancer. Basically, it’s one of those foods that we should all be consuming every day to help promote a happy, healthy and beautiful body, inside and out.
