chocolate mousse

I can not even begin to emphasise how delicious this vegan chocolate mousse is. So simple to make. So easy to eat. And so unbelievably healthy. Who would have thought chocolate mousse could be so nutritious. Inspired by a recipe that my lovely organic fruit and veggie grocer in Gibraltar shared with me, this recipe is a MUST TRY.

ingredients
1 heaped tablespoon certified-organic raw cacao powder
1 ripe organic avocado
1 tablespoon certified-organic unrefined virgin coconut oil, melted over a low heat
1/2 teaspoon organic vanilla extract
1 dessert spoon of organic maple syrup or 1/2 teaspoon stevia
** use organic and biodynamic ingredients where possible **

Mix all the ingredients in a bowl and then put in the fridge to set.
It’s a great recipe to experiment with. Sometimes I add crushed up hazelnuts and/or maca powder.

Another fabulous thing about this recipe is … drum roll … it can be frozen and … ta da … you have chocolate icecream.
