easy but oh so yummy everyday salad

Salads are one of those things that are an everyday staple in my life. Whilst I love to put together a kick ass jumbo salad, sometimes time simply doesn’t permit, and I have to lovingly throw together something in a couple of minutes. So here goes my all time favourite easy but oh so yummy everyday salad.

1 handful of rocket
1 bunch of chives, chopped finely
2 tomatoes sliced in to bite sized pieces
1 avocado sliced in to bite sized pieces
1 tablespoon of pumpkin seeds
1 teaspoon of poppy seeds
himalayan pink salt and cracked black pepper
extra virgin cold-pressed olive oil, hemp oil, pumpkin seed oil and/or avocado oil
juice of half a lemon
juice of half a lime
** use organic and biodynamic ingredients where possible **

Place rocket, chives, tomatoes and avocado in a bowl. Sprinkle the pumpkin and poppy seeds on top. Add salt and pepper to taste. Drizzle with olive oil, lemon and lime juice. Enjoy!

NUTRITION NOTES: PUMPKIN SEEDS

Pumpkin seeds are an excellent source of zinc, magnesium, manganese and tryptophan, as well as a good source of many other minerals such as iron and copper. Tryptophan is converted into serotonin – nature’s sleeping pill, so a handful of these seeds at dinner time make for a good night’s sleep. Pumpkin seeds are also a good source of vitamin E, an excellent antioxidant, a good quality protein, and beneficial in helping to prevent prostate and ovarian cancers.
