100g quinoa or brown rice
300g organic non-GMO firm tofu, cut in to bite-sized cubes
4 tablespoons organic unrefined coconut oil
1 teaspoon cumin
1 teaspoon tumeric
1 teaspoon ground coriander
1 pinch of sea salt
1 large brown onion, finely chopped
1 thumb sized piece of ginger, finely chopped
3 cloves of garlic, finely chopped
1 teaspoon cinnamon
2 teaspoon garam masala
2 bags of frozen spinach, thawed

** use organic and biodynamic ingredients where possible **

In a saucepan of purified water, cook the quinoa over a low heat for approximately 20 minutes (or as recommended on the packaging). Cover with a lid and leave to the side.

In a bowl mix 3 tablespoons of coconut oil, cumin, turmeric, ground coriander and salt. Add the tofu cubes and coat each one.

Pour the tofu mixture in to a saucepan on medium heat. Cook for approximately 10 minutes, turning the tofu cubes so that each side turns a golden brown. Add sprinkles of purified water as and when needed, so that the spices don’t burn. Remove tofu cubes from saucepan on to a plate and put to the side.

In the same saucepan add the remaining tablespoon of coconut oil, onion, ginger, garlic, cinnamon, garam masala and spinach. Cook over a medium heat for 10 minutes. Add the tofu cubes. Serve with quinoa or brown rice. Enjoy!
