superfood salad

I have recently become sprouts obsessed. I have little jars of sprouts sprouting up all over the kitchen window sill. It’s been an absolute joy to water them every morning and night and add a little extra love to each feed. It also inspired me to create a seriously delicious superfood salad. There are so many sprouts to choose from, so it’s really only limited to your imagination as to which sprouts to use – white radish, mung beans, red clover, lentils, alfalfa, arugala, green pea, yellow pea, garlic, fenugreek etc)

Serves one
1 handful of sprouts
1 ripe avocado, chopped in to bite-sized chunks
1 tomato, chopped in to bite-sized chunks
100g tempeh, chopped in to bite-sized chunks, and lightly sautéed in coconut oil
1 handful mushrooms, chopped in to bite-sized chunks, and lightly sautéed in coconut oil
1 tablespoon goji berries
1 tablespoon pumpkin seeds
1 teaspoon chia seeds
1 teaspoon sunflower seeds
1 handful of walnuts, broken in to quarters
1 tablespoon flax seed oil
1 teaspoon pumpkin seed oil
1 teaspoon Bragg Liquid Aminos
juice of 1 fresh lime
cracked pepper
himalayan pink salt

** use organic and biodynamic ingredients where possible **

Add all ingredients to a bowl. Drizzle the flax seed oil, pumpkin oil, Bragg Liquid Aminos and fresh lime all over. Enjoy!
