I love to make a number of salads and eat them together. One of my favourite combination is this Green Immune Booster Salad with the Blood Cleansing (Anti-Cellulite) Salad and Anti-Candida Salad. So many delicious fresh flavors!
1 handful of kale ±
1 handful lettuce, arugula/rocket or baby spinach
1 small cucumber
1 ripe avocado
1 handful of alfalfa sprouts
1 handful of parsley
1 handful of coriander/cilantro
** use organic and bio-dynamic ingredients where possible **
± if you’re worried about the oxalates in raw kale, then lightly steam it for a minute or two
Finely slice all ingredients and add to salad bowl. Toss to combine. Drizzle with creamy (vegan) dressing.
CREAMY (VEGAN) DRESSING
2 tablespoons extra virgin cold pressed olive oil
1 teaspoon apple cider vinegar
1 handful of basil (finely sliced if using mortar and pestle)
1 teaspoon tahini
sea salt and cracked black pepper
combine all ingredients in a blender (or in a mortar and pestle)
NUTRITION NOTES: KALE
Kale has sulphur-containing phytonutrients which are said to be cancer fighting. These phytonutrients also act as antioxidants. Kale is a great source of beta-carotene which is converted to Vitamin A in the body. Both of these nutrients are important for vision. Kales also contains an abundance of vitamin C, an immune booster, antioxidant an supports collagen (the main protein in the body that holds our organs together). Kale is also a good source of calcium and iron.
